How do I tell if the buyer is scamming me?

Answer:

It is very difficult to tell if a buyer is scamming you. Never refund money until your bank confirms that the funds have cleared. Depositing a cashiers check is not sufficient!

Be suspect of any buyer that wants to pay more than you are asking with the request of a refund (even a partial refund). You will likely lose the money you send AND the item you shipped.

Use escrow for large sales. Escrow.com will make sure the funds clear before you ship the item.
